MAC-IES

MAC-IES began as a simple idea from co-owner Dillan Mena.

While building Galveston Bagel Company from the ground up, long days and even longer nights often meant grabbing food on the go. One thing became clear: finding a truly great burger wasn't as easy as it should have been. Not a gourmet burger. Not a trendy burger. Just a good, honest burger done right.

On a whim, Dillan started experimenting with smashburgers for employees, friends, and family at Galveston Bagel Company. After countless test runs, tweaking techniques, and dialing in flavors, he landed on something special. The response was immediate, everyone loved them.

At the time, Galveston Bagel Company had recently moved from its food truck into its permanent location, leaving the truck parked on the patio waiting for its next purpose. Before long, the answer became obvious: turn it into a smashburger concept.

The final piece was the name. Inspired by the owners' daughter, Macie, MAC-IES (pronounced "MAC-EES") was born.

What started as a few burgers for friends has grown into an award-winning local favorite built around a simple philosophy: quality ingredients, bold flavors, and great burgers made fresh every time.
